Born as a high-demand take away kitchen in the heart of Bari, our concept evolved rapidly thanks to the incredible support of our local community. Following the success of our initial delivery venture, we took the leap into the city's Historic Center, opening a dedicated restaurant that captures the timeless spirit of Bari. At Da Paolo Pizzeria, we are dedicated to crafting every pizza with the finest Italian ingredients, starting with sun-ripened San Marzano tomatoes, mozzarella di Bufala campana, and Premium extra-virgin olive oil to enhance every flavor. Every recipe is crafted with love, ensuring that every bite celebrates the authentic heritage, quality, and soul of Italian tradition.
Through the most important stages of dough making: "Doughing, Staglio, Pirlatura," adapting to the seasonal humidity (and timing the dough to ripen), we extend the leavening process from 36 to 72 hours, ensuring the highest quality for the most discerning palates and for a truly Italian pizza.

The new wood-fired oven, custom-built for the most demanding customers, was designed to operate in the best possible conditions and to guarantee high-quality products, giving off its unique, characteristic aroma that only a wood-fired oven can provide.
